Juicy and jewel-like in appearance, the Pomegranate is mainly grown in America, Spain, the Middle East and India. They are rich in antioxidants and a brilliant way to your five-a-day. Although they don’t fruit in the UK, the beatiful trees will make a lovely addition to your space.
Pick up your own Pomegranate from Natoora to create your own Pomegranate Chia Pudding with Almond Milk, inspired by Granger & Co’s almond milk chia pot with berries, pomegranate and coconut yogurt (serves 2, courtesy of Organically Mandy):
Ingredients:
1 cup of pomegranate seeds
1 cup unsweetened almond milk
1 cup water
½ cup chia seeds
½ tsp lemon juice
½ tsp cinnamon
1-2 tsp honey (optional)
¼ tsp salt
2-3 tbs plain greek yogurt (optional)
Dark chocolate shavings (optional)
Method:
1. Place the pomegranate seeds and almond milk in a blender and blend on low until smooth
2. Mix all the remaining ingredients (except for the yogurt and chocolate) together in a bowl or glass container (a great way to recycle old jam jars!)
3. Allow the pudding to sit for 20 minutes, or until the chia seeds are plump and gelatinous. You can also prepare this the night before so you have breakfast ready and waiting for you when you get up.
4. Divide pudding up into serving dishes and top, optionally, with yogurt and dark chocolate shavings.
